Tolino Vineyards is back for the July Tapas and Tasting event.  This time they are teaming up with Dundore & Heister Butchery for an evening of delectable pasture-raised bites and wine pairings.

Pairings include:

1.      Smoked Ham with the Dundore and Heister Special Reserve Cheddar Cheese and Garlic Jam on top  paired with Lilly, a semi dry white wine with an apple aroma and a a light grapefruit citrus body.  Ham can be rich and salty and the delicate sweetness and sharp acidity of the Lilly will cut through the richness of the ham and balance the saltiness.

2.      House Roast Beef with herbs des Provence chèvre cheese and the horseradish jam paired with Cabernet Franc, a dry bold red  with Blackberry & black pepper aromas and a cherry, blackberry, oakspice, & tobacco body.  The complexity and boldness of this red has enough power to stand up to the horseradish while complementing the roast beef.

3.      Rotisserie Chicken Salad Rollup  (wrapped in a flour tortilla) paired with Chardonnay, a lightly oaked dry white wine with pear &peach aroma and apple & pear body with crisp acidity.  Roasted chicken in a slightly creamy sauce complements the lightly oaked, fruit forward  Chardonnay

4.       House Roasted Vegetables with a balsamic Glaze in Debbie’s Pie in the Sky mini tart shells paired  with Pinot Grigio a dry white with orange, grapefruit & pineapple aromas and grapefruit, lemon citrus & clementine body.  The best wines to pair with salads and balsamic should be high in acidity to compete with the balsamic flavors of the glaze.
